Gluten free and packed with fibre and protein, this deliciously healthy apple cake is a pure taste of autumn that also nourishes the digestive system. Recipe courtesy of Teresa Cutter, The Healthy Chef.


Apples are high in fibre, which helps to nourish a healthy digestive system. The fibre is known as pectin and the beauty of this fibre is that it also has the power to help lower cholesterol and stabilise blood sugar.

Serves 6


  • 125ml (½ cup) extra virgin olive oil
  • 125ml (½ cup) raw honey, warmed
  • 4 organic eggs
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground cinnamon
  • 400g almond meal
  • 3 teaspoons gluten free baking powder
  • 750g pink lady apples, diced with the skin on


  1. Preheat your oven to 160°C, fan forced.
  2. Combine olive oil, honey, eggs, vanilla and cinnamon into a mixing bowl.
  3. Add almond meal and baking powder then mix through.
  4. Fold in the apples, and spoon into a baking tin lined with baking paper.
  5. Press the cake mix carefully into the baking dish, making sure all the apples are pressed down firmly into the mix. You can also bake the cake in a large 25cm skillet, which looks really cool and can be served as a pudding.
  6. Bake for 60 minutes until cooked through then remove from the oven and cool in the tin.
  7. Serve at room temperature and enjoy.


Notes and inspiration: Serve with a generous dollop of Greek yoghurt.
